President's Letter

The New Year is upon us and the Michigan Chefs de Cuisine is off and running. This is an exciting time to be a member of the MCCA, with the many events we have planned this year

The biggest news of the upcoming year is our own ACF Central Regional Conference at The MotorCity Casino Hotel. The Conference is only two months away, so be sure to register as soon as possible. You will need to register by March 2, 2012 to receive the best possible early discounted rates. Chef Randy Smith, CEC is finalizing his list of volunteers, and will be will contacting each person in the next few of weeks. I will be in contact with each department chair at all of our local culinary schools to discuss the many opportunities for students to assist at the conference. We are approaching crunch time and need the help of our members to make this a successful event.

Great news for Detroit Tiger fans! We recently acquired a new slugger to our line-up. The addition of All-Star Prince Fielder should make for another exciting Detroit Tiger Game and Tailgate. The Detroit Athletic Club has again graciously agreed to host this successful event on Tuesday, June 5th, 2012. We will meet at the DAC, enjoy a fantastic cook out and then stroll across the street to Comerica Park to watch the Tigers beat the Cleveland Indians. The last three years have been great and this year should be equally as good. Tickets will be limited and available on a first-come, first-served basis. Watch the newsletter and website for additional information as it becomes available. Hope to see many of you there.

The weather remained just cold enough to have another successful Plymouth Ice Carving Festival. This was the 30th year for the festival and serves as a great learning event for our student ice carvers. Henry Ford, Macomb and Oakland Community College each carved large display pieces for the Show. They competed along with The Art Institute, Washtenaw Community College, and U of M. Henry Ford took top honors in the Team and Individual events with Oakland Community College finishing close behind. The National Collegiate Ice Carving Championships will be held this weekend in Frankenmuth. The Culinary Studies Institute of Oakland Community College will try to defend their 4 consecutive championships. It should be a real battle between the Henry Ford group and all the other talented teams that attend the championship. Best of luck to all of the students and professional carvers that put in countless hours of practice getting ready for the ice carving season. Next month, I will share the results from many of the winter's competitions.

Thank you to Chef Peter Veach and his staff for a fabulous meeting last month at the University of Michigan. Unfortunately I was unable to attend, missing my first meeting in the past three years. I received great feedback on the food and educational segment of the meeting. We had an enormous turn out, with nearly 100 members in attendance. Next month we will visit the Chefs and Students of Henry Ford Community College. The Canadian Consulate is bringing in members of the Lobster Council of Canada, the Mussel Industry Council and the well known Kilted Chef for a presentation on Canadian cold water Maine Lobsters, mussels and their abundance of shellfish that's readily available. It should be a real treat, and I look forward to seeing everyone there.

Join the 2012 Michigan Culinary Olympic Team for an evening of spectacular food, cocktails and dancing! Stroll your way through a delectable selection of dinner stations featuring each team chef, accompanied by the sounds of an authentic New Orleans-style jazz ensemble. Includes cash bar. All proceeds will benefit the 2012 Michigan Culinary Olympic Team representing the Michigan Chefs de Cuisine, Michigan and the USA at the 23rd IKA / World Culinary Olympics in Erfurt, Germany in October, 2012.

The event takes place on Tuesday, February 21, 6:00 p.m. at Oakland Community College, Culinary Studies Institute, Building J, 3rd Floor, 27055 Orchard Lake Rd., Farmington Hills, MI 48334. Cost is $60.00 per person, and the registration deadline is February 17, 2012.
